Recipe for a Summery No-bake Avocado and Lime Cake

Has a friend has just announced a spontaneous weekend visit, but you haven't got time to prepare something great? Then make this wonderfully summery avocado and lime cake in just 15 minutes, then put it in the fridge overnight. Voilà - the next day your guests will be amazed!

For a refreshing, raw avocado and lime cake you need the following:

For the base:

  • 1 cup hazelnuts
  • ¾ cup dates, pitted and roughly chopped (we recommend Medjoul dates)
  • 2 tbsp coconut oil

For the cream:

  • 4-5 ripe avocados depending on the size of the cake tin
  • juice of 3 limes
  • coconut sugar to taste
  • 2 tbsp coconut oil
  • a pinch of salt


Place all the ingredients for the base in a food processor and pulse with the blade attachment. The aim is to create a mixture that holds together, yet remains slightly coarse.

Press this mixture into a cake tin with a diameter of approx. 18 cm.

Now puree all the ingredients for the cream with a hand blender and spread them directly onto the base. Smooth the surface and leave the cake in the fridge for at least 3 hours.

Then carefully remove the cake from its tin and finally decorate with lime slices and mint!
